Roast Cherry Tomatoes

Not only beautiful, this side dish also balances out most rich mains with its sweet acidity. It has always been a staple of my mother’s repertoire, and I find myself adding it to most meals.  

ingredients

  • 800 g cherry tomatoes
    on the vine 
  • Olive oil 
  • Salt 

method

Preheat the oven to 200 °C/180 °C fan-forced.

Put the tomatoes in an ovenproof dish, drizzle with a little oil and sprinkle with salt. Roast for 40 minutes, until the tomatoes begin to char and shrivel.

Remove the tomatoes from the oven and transfer them to a serving dish, or serve them directly from the ovenproof dish.
